This creamy Tuscan garlic chicken is a fast and flavorful dinner made with tender chicken breasts, sun-dried tomatoes, spinach, and a rich garlic parmesan sauce.
Season the chicken breasts with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, about 5-7 minutes per side. Remove and set aside.
In the same skillet, add garlic and cook until fragrant, about 1 minute.
Add sun-dried tomatoes and cook for 2 minutes.
Pour in heavy cream and bring to a simmer. Stir in parmesan cheese and red pepper flakes, if using.
Add fresh spinach and cook until wilted, about 2-3 minutes.
Return chicken to skillet and coat with sauce. Cook for an additional 2 minutes to heat through.
