Instructions
In a large pot, heat the olive oil over medium heat.
Add the finely chopped onion, diced carrots, diced celery, and minced garlic. Sauté until the vegetables are softened.
Add the ground turkey to the pot, breaking it up with a spoon and cooking until browned.
Pour in the chicken broth, white beans, dried thyme, dried rosemary, and add the bay leaf. Stir to combine.
Bring the soup to a simmer, allowing it to cook for about 15-20 minutes to let the flavors meld.
Add the chopped kale to the pot and simmer for an additional 5-7 minutes or until the kale is tender.
Season the Turkey White Bean Soup with salt and pepper to taste, adjusting as needed.
Discard the bay leaf and ladle the soup into serving bowls.
