Prepare the Dough:
Activate the Yeast: In a small bowl, combine the warm milk, active dry yeast, and 1 tablespoon of the sugar. Stir gently and let it sit for 5-10 minutes, or until the mixture becomes frothy, indicating that the yeast is active.
Mix Wet Ingredients: In a large mixing bowl, combine the melted butter, remaining sugar, egg, and the yeast mixture. Mix well.
Add Dry Ingredients: Add 2 cups of flour and the salt to the wet mixture. Stir until combined. Gradually add the remaining flour, 1/2 cup at a time, until a soft dough forms. The dough should be slightly sticky but not too wet.
Knead the Dough: Transfer the dough to a lightly floured surface and knead for about 5-7 minutes, until smooth and elastic. If the dough is too sticky, add a little more flour, 1 tablespoon at a time.
Let the Dough Rise:
First Rise: Place the dough in a greased bowl, turning once to coat the top. Cover the bowl with a clean kitchen towel and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Shape the Rolls: Once the dough has risen, punch it down to release the air. Turn the dough out onto a floured surface and roll it out into a rectangle, about 1/2-inch thick. Cut the dough into 12-16 squares or rectangles using a sharp knife or a pizza cutter.
Second Rise: Place the cut dough pieces onto a greased or parchment-lined baking sheet. Cover with a kitchen towel and let them rise for another 30 minutes.
Bake the Rolls:
Preheat Oven: Preheat your oven to 350°F (175°C).
Bake: Bake the rolls in the preheated oven for 15-18 minutes, or until they are golden brown on top.
Brush with Butter: Immediately after removing the rolls from the oven, brush the tops with the melted butter for that classic Texas Roadhouse finish.
