Instructions
Preparation Steps
In a heavy saucepan, combine sugar, corn syrup, and water over medium heat. Stir until sugar dissolves.
Bring the mixture to a boil, without stirring, until it reaches 250°F (hard ball stage) on a candy thermometer.
Remove from heat and quickly stir in heavy cream, butter, and vanilla extract until smooth.
Mix in chopped apples and cinnamon, then pour mixture onto a greased baking sheet.
Allow to cool slightly until firm but still pliable, then pull and stretch taffy to aerate it.
Cut into pieces and let cool completely before serving.
Notes
This taffy tastes best when freshly made and stored in an airtight container for up to one week.
