1can10.5 oz cream of mushroom or cream of chicken soup
1cupsour cream
1can10 oz diced tomatoes with green chilies (drained)
1cupshredded cheddar cheese
1cupshredded Monterey Jack cheese
1bag32 oz frozen tater tots
1/4cupchopped green onionsoptional, for garnish
1/4cupchopped fresh cilantrooptional, for garnish
Instructions
Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish.
Cook the Meat: In a skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat. Stir in the taco seasoning and cook according to package instructions.
Mix the Filling: In a large bowl, combine the cooked meat, cream of mushroom or chicken soup, sour cream, diced tomatoes with green chilies, and half of the shredded cheeses. Stir until well mixed.
Assemble the Casserole: Spread the meat mixture evenly into the prepared casserole dish. Arrange the tater tots in a single layer on top.
Add Cheese: Sprinkle the remaining shredded cheeses over the tater tots.
Bake: Bake in the preheated oven for 35-40 minutes, or until the tater tots are golden brown and crispy, and the cheese is melted and bubbly.
Garnish and Serve: Remove from the oven and garnish with green onions and cilantro, if desired. Serve hot.
