Instructions
Preparation Steps
Preheat the oven to 400°F (204°C).
In a saucepan, bring water and butter to a boil over medium heat.
Remove from heat and stir in flour all at once until mixture forms a ball.
Transfer dough to a mixing bowl and beat in eggs one at a time until smooth.
Pipe dough onto baking sheet and bake for 20-25 minutes until puffed and golden.
Cool eclairs completely before slicing.
Fill eclairs with pastry cream and top with sliced strawberries.
Dust with powdered sugar before serving.
Notes
Best served chilled. Store leftovers in an airtight container in the refrigerator for up to 2 days.
