Instructions
Prepare the Filling: In a bowl, combine the chopped spinach, crumbled feta cheese, shredded mozzarella (if using), and minced garlic. Season with salt and black pepper to taste.
Butter the Bread: Spread the softened butter on one side of each slice of bread.
Assemble the Sandwiches: Place two slices of bread butter-side down in a skillet over medium heat. Spoon the spinach and feta mixture onto each slice, spreading it evenly. Top with the remaining slices of bread, butter-side up.
Grill the Sandwiches: Cook for about 3-4 minutes, or until the bottom is golden brown. Carefully flip the sandwiches and grill the other side for another 3-4 minutes, or until golden and the cheese is melted.
Serve: Once the sandwiches are golden and crispy, remove them from the skillet. Cut in half and serve warm.
