Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add diced onions and minced garlic; sauté until onions are translucent, about 5 minutes.
Add chicken breasts to the pot and cook for 3 minutes per side, until lightly browned.
Pour in chicken broth, then add chopped carrots, celery, crushed red pepper flakes, smoked paprika, salt, and black pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 25 minutes or until the chicken is cooked through and vegetables are tender.
Remove chicken breasts, shred with two forks, and return shredded chicken to the pot. Stir in chopped cilantro and cook for another 2 minutes.
Taste and adjust seasoning if needed. Serve hot.
