Instructions
Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
Prepare Sweet Potatoes: In a large mixing bowl, toss the cubed sweet potatoes with olive oil, minced garlic, grated Parmesan cheese, dried thyme, salt, and black pepper. Ensure the sweet potatoes are evenly coated.
Spread on Baking Sheet: Spread the sweet potatoes in a single layer on the prepared baking sheet. Make sure they are not too crowded, so they roast evenly and become crispy.
Roast: Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the sweet potatoes are tender and golden brown, stirring halfway through to ensure even cooking.
Garnish and Serve: Remove from the oven and sprinkle with additional Parmesan cheese if desired. Garnish with chopped fresh parsley and serve warm.
