Preparation Steps
Preheat the oven to 350°F (175°C). Line a baking pan with parchment paper and lightly dust it with flour.
Grind the shelled pistachios in a food processor until finely chopped but not pasty.
In a mixing bowl, whip the heavy cream with the vanilla extract until soft peaks form.
Slowly add sugar to the pistachios and mix well. Then fold the whipped cream into the pistachio mixture gently.
Pour the pistachio mixture into the prepared pan and spread evenly. Bake for 15 minutes or until set.
Remove from the oven and let cool before slicing into serving pieces.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Enjoy chilled for best flavor.
