Preparation Steps
Preheat the oven to 350°F (177°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy and smooth.
Add the egg and vanilla extract to the butter mixture and beat well until combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated.
Fold in the white chocolate chips and crushed peppermint candies.
Scoop tablespoon-sized dough onto baking sheets about 2 inches apart. Sprinkle extra crushed peppermint candies on top of each cookie.
Bake for 10-12 minutes or until edges are lightly golden. Let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
