Preparation Steps
Preheat the oven to 325°F (163°C). Grease a 9x9 inch baking pan and set aside.
In a bowl, combine graham cracker crumbs, 0.25 cup sugar, and melted butter. Press mixture evenly into the bottom of the prepared pan.
Bake the crust for 10 minutes, then remove from oven and set aside.
In a large mixing bowl, beat the cream cheese and peanut butter together until smooth and creamy.
Add 0.75 cup sugar, eggs, and vanilla extract to the cream cheese mixture. Beat until well combined.
Pour the cheesecake batter over the baked crust and spread evenly.
Bake for 30 minutes or until the edges are set but the center slightly jiggles when you shake the pan.
Let cool completely at room temperature, then refrigerate for at least 2 hours before cutting into bars.
