Preparation Steps
In a large bowl, beat together peanut butter, softened butter, and vanilla extract until smooth.
Gradually add powdered sugar and mix until the dough is firm but pliable.
Roll the dough into 1-inch balls and place them on a wax-paper-lined baking sheet.
Chill the peanut butter balls in the freezer for at least 30 minutes.
In a double boiler, melt chocolate chips with shortening until smooth.
Dip each peanut butter ball into the melted chocolate, leaving a small circle of peanut butter visible on top.
Place dipped balls back on wax paper and refrigerate until firm, about 1 hour.

Store buckeyes in an airtight container in the refrigerator for up to 2 weeks.
