Preparation Steps
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add to the creamed mixture.
Stir in the rolled oats until evenly combined.
Drop dough by rounded tablespoons onto prepared baking sheets. Bake for 12-15 minutes or until golden brown.
Allow cookies to cool completely on wire racks before assembling the filling.
To make the filling, beat together powdered sugar, softened butter, vanilla extract, and milk until smooth and creamy.
Spread or pipe the filling onto the flat side of half the cookies, then top with the remaining cookies to form sandwiches.
