Instructions
Preparation Steps
In a large pot, sauté onion and garlic until fragrant.
Add the chicken thighs, cooking until browned on all sides.
Stir in carrots, celery, lentils, chicken broth, thyme, and bay leaf.
Bring to a boil, then lower heat and simmer for 45 minutes until lentils are tender.
Remove chicken, shred it, and return to the soup. Adjust seasonings.
Notes
For extra flavor, add a squeeze of lemon or a sprinkle of fresh herbs before serving.
