Instructions
Preparation Steps
In a medium bowl, mix the graham cracker crumbs and melted butter. Press into the bottom of a springform pan to form the crust.
In a saucepan, combine cranberries, 0.5 cup sugar, and orange zest. Cook over medium heat until cranberries burst.
In a large bowl, beat cream cheese, remaining sugar, and vanilla until smooth. Fold in whipped cream and cranberry mixture.
Spread the mixture over the crust in the springform pan, smoothing the top.
Refrigerate the cheesecake for at least 4 hours or until set.
Notes
For a sparkling finish, dust with powdered sugar before serving.
