Preparation Steps
Preheat the oven to 350°F (175°C). Grease a 9-inch round baking dish.
In a large bowl, combine ricotta cheese, sugar, flour, lemon juice, lemon zest, vanilla extract, and salt. Mix until smooth.
In a separate bowl, beat the egg whites until stiff peaks form. Gently fold egg whites into the ricotta mixture.
Pour the batter into the prepared baking dish and bake for 25 minutes or until the top is lightly golden and set.
