Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Grease a 9x9 inch baking pan.
In a bowl, mix flour and sugar for the crust. Cut in cold butter until mixture forms coarse crumbs. Press evenly into prepared pan.
Bake crust for 15 minutes until lightly golden. Remove from oven.
Whisk eggs, lemon juice, powdered sugar, and lemon zest until smooth. Pour over the hot crust.
Bake for 20 minutes or until filling is set and edges are lightly browned.
Cool completely before cutting into squares. Serve chilled or at room temperature.
