Preparation Steps
Preheat the oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
In a medium bowl, whisk together flour, baking powder, salt, and shredded coconut.
In a separate large bowl, beat eggs and sugar until light and fluffy.
Add lemon juice and coconut milk to the egg mixture and stir to combine.
Gradually fold the dry ingredients into the wet ingredients until just combined.
Pour the batter into the prepared pan and bake for 28-30 minutes or until a toothpick inserted in the center comes out clean.
Allow to cool completely before slicing and serving.
