Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for 1 minute until fragrant.
Slice kielbasa sausage into 1/4-inch pieces and add to the pot. Cook until browned, about 5 minutes.
Add sliced carrots and chopped cabbage. Stir to combine with sausage mixture.
Pour in chicken broth, bring to a boil, then reduce heat and simmer for 30 minutes until vegetables are tender.
Season soup with salt, black pepper, and optional red pepper flakes to taste. Stir well before serving.
