Instructions
Preparation Steps
Add chicken breasts, salsa, cumin, and garlic powder into the Instant Pot.
Seal the Instant Pot and cook on high pressure for 15 minutes.
Quick release the pressure and shred the chicken using two forks.
Mix shredded chicken with the salsa mixture in the pot.
Warm the corn tortillas to make them pliable, then spoon chicken mixture onto each tortilla and sprinkle with cheddar cheese.
Roll tortillas tightly into taquitos.
Heat vegetable oil in a skillet over medium heat and fry taquitos until golden and crispy, about 2 minutes per side.
Drain on paper towels and serve warm.
Notes
These taquitos are great served with guacamole, sour cream, or extra salsa. Perfect for a family meal or party appetizer.
