Instructions
Preparation Steps
Turn the Instant Pot to sauté mode and heat olive oil. Add minced garlic and cook until fragrant, about 1 minute.
Add chicken thighs to the pot and sprinkle with oregano, cumin, paprika, salt, and black pepper. Stir to coat evenly.
Pour 0.25 cup of water into the pot to deglaze the bottom, scraping any browned bits with a wooden spoon.
Close the lid, set the valve to sealing, and cook on high pressure for 12 minutes. Allow natural pressure release for 10 minutes, then quick release.
Remove chicken and shred using two forks. Return to the pot and stir with the juices.
Warm pita bread and assemble gyros by adding shredded chicken, tzatziki sauce, tomatoes, red onion, and feta cheese as desired.
Serve immediately and enjoy your flavorful Instant Pot gyros!
Notes
You can substitute chicken with lamb or beef for a more traditional gyros flavor.
