Instructions
Preparation Steps
Set the Instant Pot to sauté mode and heat olive oil. Brown the pork shoulder on all sides, about 3 minutes per side.
Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
Pour in chicken broth, soy sauce, and brown sugar. Stir to combine.
Seal the Instant Pot lid and set to high pressure for 30 minutes.
Once cooking is complete, allow natural pressure release for 10 minutes, then quick release remaining pressure.
Remove pork and shred with two forks. Mix shredded pork back into the sauce before serving.
Notes
For best flavor, marinate pork in the soy sauce and ginger mixture for 1 hour before cooking.
