Instructions
Marinate the Chicken:
In a large bowl, combine the olive oil, grated Parmesan, minced garlic, lemon juice, chopped parsley, salt, pepper, and red pepper flakes (if using).
Add the chicken pieces to the bowl and toss to coat them well with the marinade. Cover and refrigerate for at least 30 minutes, or up to a few hours for more flavor.
Prepare the Skewers:
Thread the marinated chicken pieces onto the soaked wooden skewers.
Preheat the Grill:
Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled.
Grill the Skewers:
Grill the chicken skewers for 10-12 minutes, turning occasionally, until the chicken is golden brown and cooked through with an internal temperature of 165°F (75°C).
Serve:
Remove the chicken skewers from the grill and let them rest for a few minutes. Garnish with additional chopped parsley and a sprinkle of Parmesan cheese before serving.
