Prepare the Ingredients:
Grate the zucchini and use a clean kitchen towel or paper towels to squeeze out as much moisture as possible.
If using corn on the cob, remove the kernels from the cob using a sharp knife.
Make the Burger Mixture:
In a large bowl, combine the ground chicken, grated zucchini, fresh corn kernels, breadcrumbs, egg, chopped herbs, minced garlic, salt, and pepper.
Mix until well combined but avoid overmixing to keep the burgers tender.
Form the Burgers:
Divide the mixture into 4-6 portions, depending on the desired size, and shape each portion into a patty.
Cook the Burgers:
Heat a drizzle of olive oil in a large skillet or grill pan over medium heat.
Cook the burgers for 5-6 minutes on each side, or until fully cooked through and golden brown on the outside. The internal temperature should reach 165°F (74°C) for chicken.
