Instructions
Preheat the Oven:
Preheat your oven to 425°F (220°C).
Prepare the Avocados:
Cut the avocados in half and remove the pits. If the hole where the pit was seems small, scoop out a bit more avocado to make enough room for the egg. Take care not to remove too much; you want a nice border of avocado flesh.
Place the avocado halves in a baking dish or on a muffin tin to keep them stable and prevent them from tipping over.
Add Eggs:
Crack an egg into a small cup, then gently pour it into the hole of an avocado half. Repeat this with the remaining eggs and avocado halves. Depending on the size of your eggs and avocados, you might not use all the egg white to avoid spilling.
Season each filled avocado with salt and pepper.
Bake:
Bake in the preheated oven for 15-20 minutes, or until the eggs are cooked to your liking.
Add Toppings and Serve:
Once done, remove from the oven and sprinkle the crumbled bacon over the top.
Add any additional optional toppings like chives, cheese, hot sauce, or salsa.
