Preparation Steps
Preheat the oven to 400°F (204°C). Grease an 8x8 inch baking pan with butter.
In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt.
In another bowl, whisk together the milk, eggs, melted butter, and half of the honey.
Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
Pour the batter into the prepared pan and bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
Remove from oven and immediately brush the top with the remaining honey and a little melted butter for a sweet glaze.
Allow the cornbread to cool slightly before serving warm.
Notes
For extra flavor, serve with additional honey butter or a dollop of whipped cream.
