Instructions
Preparation Steps
In a large pan, heat olive oil over medium heat.
Add the diced onion and minced garlic, sauté until soft, about 3 minutes.
Stir in the ground beef, cooking until browned, approximately 5-7 minutes.
Mix in the paprika, cumin, salt, and pepper; cook for an additional minute.
Add cubed potatoes and beef broth. Stir to combine.
Cover the pan, reduce heat to low, and simmer for 25 minutes or until potatoes are tender.
Serve warm, garnished with fresh herbs if desired.
Notes
Add a dollop of sour cream on top for extra creaminess!
