Instructions
Preparation Steps
In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent.
Stir in the garlic, carrots, and celery. Cook for another 5 minutes until vegetables soften.
Add the lentils, broth, cumin, thyme, bay leaf, and pepper. Bring to a boil, then reduce heat.
Simmer uncovered for about 30 minutes until lentils are tender, stirring occasionally.
Remove the bay leaf before serving. Adjust seasoning to taste if needed.
Notes
Enhance flavor by adding a splash of lemon juice before serving. Serve with crusty bread for a complete meal.
