Instructions
Preparation Steps
In a bowl, mix soy sauce, brown sugar, grated ginger, minced garlic, and olive oil to create the marinade.
Place the chicken breasts in the marinade and refrigerate for at least 30 minutes.
Heat a large skillet over medium heat and cook the marinated chicken for 6-7 minutes on each side until cooked through.
In the same skillet, add pineapple chunks and cook for 3-4 minutes until they start to caramelize.
Combine the remaining marinade with cornstarch in a small bowl and pour into the skillet, stirring until sauce thickens.
Return the chicken to the skillet, coat with sauce, and serve hot with pineapple on top.
Notes
Serve with steamed rice or a fresh green salad for a complete tropical meal.
