Instructions
Preparation Steps
Preheat the grill to medium-high heat.
Season the chicken with olive oil, cumin, salt, and pepper.
Grill the chicken for 6-7 minutes per side until cooked through.
Meanwhile, heat the cooked rice and mix in corn and diced bell pepper.
Remove chicken from the grill and let it rest for 5 minutes before slicing.
Serve the sliced chicken over the rice mixture and garnish with avocado and cilantro.
