Instructions
Preparation Steps
Preheat your grill to medium-high heat.
In a pot, combine quinoa and 3 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
While quinoa cooks, season chicken breasts with olive oil, garlic powder, onion powder, cumin, salt, and pepper.
Grill chicken for about 6-7 minutes per side or until cooked through.
Remove chicken from the grill and let it rest for a few minutes before slicing.
Fluff the cooked quinoa with a fork. In a bowl, combine quinoa, spinach, and cherry tomatoes.
Top the quinoa mixture with sliced grilled chicken. Serve immediately.
Notes
For added flavor, try a squeeze of lemon juice over the top before serving.
