Instructions
Preparation Steps
Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, beat eggs and sugar until light and fluffy. Add melted butter, sour cream, and vanilla extract and mix until combined.
Gradually add the dry ingredients to the wet mixture and stir until just combined.
Pour half the batter into the prepared pan.
Prepare the streusel topping by mixing brown sugar, flour, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs.
Sprinkle half of the streusel topping over the batter in the pan.
Pour the remaining batter over the streusel layer and top with the remaining streusel mixture.
Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
Let the coffee cake cool in the pan for 15 minutes before slicing and serving.
Notes
This coffee cake is best served warm with a cup of your favorite coffee or tea. Store leftovers tightly covered at room temperature for up to 3 days.
