Instructions
Preparation Steps
Preheat the oven to 400°F (200°C).
In a large bowl, combine olive oil, garlic, rosemary, thyme, salt, and pepper.
Add the potatoes to the bowl and toss to coat evenly with the herb mixture.
Spread the potatoes out on a baking sheet in a single layer.
Roast the potatoes in the preheated oven for about 25 minutes, until tender.
While the potatoes are roasting, heat a grill or skillet over medium-high heat.
Season the steak with salt and pepper on both sides.
Cook the steak for about 4-5 minutes on each side for medium-rare, or adjust to your liking.
Let the steak rest for a few minutes, then slice it thinly against the grain.
Serve the sliced steak with the roasted potatoes.
