Instructions
Preparation Steps
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
In a large bowl, beat the butter and sugar until light and fluffy. Add eggs and peppermint extract, and mix well.
Gradually add dry ingredients to the wet ingredients, mixing until just combined. Stir in chocolate chips if using.
Drop tablespoonfuls of dough onto prepared baking sheet, spacing them about 2 inches apart.
Bake in preheated oven for 10 minutes or until edges are set. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For an extra festive touch, sprinkle crushed peppermint candies on top of the cookies before serving.
