Instructions
Preparation Steps
In a large pot, heat olive oil and butter over medium heat until melted.
Add sliced onions and cook, stirring frequently, until caramelized and golden brown, about 30 minutes.
Stir in dry thyme, black pepper, and beef broth; bring mixture to a simmer and cook for 15 minutes.
Preheat oven broiler. Ladle soup into oven-safe bowls, place toasted baguette slices on top, and cover with shredded Gruyère cheese.
Broil until cheese is melted and bubbly, about 3 to 5 minutes. Serve hot.
Notes
