Instructions
Preparation Steps
In a large pot, sauté the chopped onions over medium heat until translucent, about 3 minutes.
Add minced garlic and cook for another minute until fragrant.
Stir in the diced potatoes and chicken broth. Bring to a boil.
Reduce heat to a simmer, cover, and cook until potatoes are tender, about 20 minutes.
Remove from heat and blend the soup until smooth using an immersion blender.
Stir in heavy cream, salt, and pepper. Heat gently to combine, then serve warm.
Notes
