Instructions
Preparation Steps
In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
Add diced onion and minced garlic to the pot and sauté for 3–4 minutes until softened.
Stir in crushed tomatoes, beef broth, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a boil.
Add broken lasagna noodles to the pot and reduce heat to medium-low. Simmer for 15 minutes, stirring occasionally.
Stir in chopped basil just before removing the soup from heat.
Serve hot, topped with dollops of ricotta, shredded mozzarella, and grated Parmesan cheese.
Notes
This soup is perfect for chilly evenings and can be garnished with fresh basil or extra cheese as desired.
