Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, combine flour and sugar. Cut in the cold butter until mixture resembles coarse crumbs.
Beat in the egg and vanilla extract to form a soft dough. Divide dough into two balls, wrap in plastic, and chill for 30 minutes.
Roll out each dough ball on a lightly floured surface to a 1/4-inch thickness. Cut into 2-inch squares.
Place a teaspoon of apricot preserves in the center of each square. Fold corners to the center and press gently.
Bake for 15-18 minutes until golden brown. Cool on wire racks.
Dust cookies with powdered sugar before serving.

Store cookies in an airtight container for up to 5 days or freeze for longer storage.
