Instructions
Preparation Steps
Preheat oven to 350°F (175°C).
Boil the diced potatoes in salted water until tender but not falling apart, about 10 minutes. Drain well.
In a large mixing bowl, combine the sour cream, mayonnaise, black pepper, and half of the shredded cheddar cheese.
Add the cooked ham, green onions, and cooked potatoes to the bowl. Mix everything gently until well combined.
Transfer the mixture to a greased 9x13 inch casserole dish. Sprinkle the remaining cheddar cheese evenly on top.
Bake uncovered for 35-45 minutes until bubbly and the cheese is melted and golden brown.
Allow to cool for 5 minutes before serving.
Notes
This casserole can be prepared a day ahead and reheated before serving. For a spicier kick, add a pinch of cayenne pepper to the mixture.
