Instructions
Preparation Steps
In a small bowl, dissolve yeast in warm water with a pinch of sugar and let it sit until frothy, about 5 minutes.
In a large mixing bowl, combine flour, sugar, and salt.
Whisk in the beaten eggs, warm milk, vanilla extract, and the yeast mixture until smooth.
Cover dough and let it rise in a warm place for 1 hour or until doubled in size.
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C).
Roll out dough on a floured surface to about 1/4 inch thickness and cut into 2-inch squares.
Fry dough squares in hot oil in batches until golden brown on both sides, about 2 minutes per side.
Drain beignets on paper towels and dust generously with powdered sugar before serving.
Notes
