Instructions
Preparation Steps
Pound chicken breasts to about 1/2 inch thickness and season both sides with salt and pepper.
Lightly dredge the chicken in flour, shaking off excess.
Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat until sizzling.
Cook chicken until golden and cooked through, about 4 minutes per side. Remove and set aside.
Add chicken broth, lemon juice, and capers to the skillet, scraping up browned bits. Simmer for 5 minutes.
Whisk in remaining 2 tablespoons butter until sauce thickens slightly.
Return chicken to skillet and spoon sauce over to warm through.
Garnish with chopped fresh parsley and serve immediately.
Notes
For extra flavor, you can add a splash of white wine when deglazing the pan before adding the broth.
