Preparation Steps
In a large pot, heat olive oil over medium-high heat. Add chicken pieces and season with salt and pepper. Cook until golden brown.
Pour in the chicken broth and bring to a gentle boil. Add the mixed peas and carrots. Simmer for about 10 minutes.
In a bowl, whisk together flour, baking powder, and milk to form a smooth batter. Drop spoonfuls of batter into the simmering broth.
Cover with a lid and let dumplings cook for about 15 minutes without lifting the lid.
Once cooked, serve hot and enjoy your comforting chicken and dumplings.
Notes
Add some fresh herbs like parsley for extra flavor. Serve with crusty bread for a complete meal.
