Instructions
Preparation Steps
In a large bowl, mix peanut butter and softened butter until smooth and creamy.
Gradually add powdered sugar, mixing well after each addition to form a dough.
Shape the mixture into 1-inch balls and place on a wax paper-lined baking sheet.
Chill the balls in the refrigerator for at least 30 minutes until firm.
Melt chocolate chips and shortening together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Dip each peanut butter ball into melted chocolate, leaving a small area of peanut butter visible at the top to resemble a buckeye.
Place dipped buckeyes back onto the wax paper and refrigerate until chocolate is set.
Notes
Store buckeyes in an airtight container in the refrigerator for up to two weeks. Perfect treat for gifting!
