Preparation Steps
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, mash the ripe bananas until smooth.
Add the softened butter, brown sugar, and vanilla extract to the mashed bananas and mix well.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture and stir until just combined.
Fold in the chopped walnuts if using.
Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10 to 12 minutes, or until the edges are golden brown.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
