Preparation Steps
Cook the spaghetti in salted boiling water until al dente, about 8-10 minutes. Drain and reserve 1 cup of pasta water.
In a large skillet, cook the bacon pieces over medium heat until crispy. Remove from skillet and set aside on paper towels.
In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Remove from heat.
In a bowl, whisk together eggs, Parmesan cheese, and black pepper.
Add the cooked spaghetti to the skillet with garlic. Remove from heat to prevent scrambling the eggs.
Quickly pour egg and cheese mixture over pasta, tossing vigorously to coat. Add reserved pasta water as needed to create a creamy sauce.
Stir in crispy bacon pieces, check seasoning, and serve immediately.
Notes
Serve with extra Parmesan and a side of crusty bread. Ideal for a quick weeknight dinner.
