Instructions
Preparation Steps
In a large saucepan, melt the unsalted butter over low heat.
Stir in the peanut butter until smooth and fully combined with butter.
Remove from heat and stir in the rice cereal until evenly coated.
Press mixture evenly into a greased 9x13 inch pan.
In a microwave-safe bowl, melt the semi-sweet chocolate chips and butterscotch chips together, stirring every 30 seconds until smooth.
Pour the melted chocolate and butterscotch mixture over the rice cereal layer and spread evenly.
Refrigerate for at least 1 hour until set, then cut into squares and serve.
Notes
Store Scotcheroos in an airtight container at room temperature for up to a week.
