Instructions
Preparation Steps
Preheat the oven to 350°F (175°C).
Season pork chops with salt and pepper on both sides.
In a large skillet, brown the pork chops over medium heat for 4-5 minutes per side. Remove and set aside.
Add mushrooms to the skillet and cook until softened, about 5 minutes.
Pour in chicken broth and stir in sour cream. Simmer for 3 minutes.
Place pork chops in a casserole dish and pour mushroom sauce evenly over them.
Spread mashed potatoes over the pork chops and top with shredded cheddar cheese.
Bake uncovered for 30-35 minutes until cheese is melted and bubbly.
Let the casserole rest for 5 minutes before serving. Enjoy!
Notes
This casserole is great for family dinners and can be prepared ahead of time. Leftovers reheat well.
