Instructions
Preparation Steps
Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes.
Add garlic and cook for another 1 minute until fragrant.
Add Italian sausage to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 6-8 minutes.
Stir in the orzo pasta and cook for 1-2 minutes to toast lightly.
Pour in chicken broth and diced tomatoes. Add oregano, red pepper flakes, salt, and black pepper. Bring to a simmer.
Reduce heat to low, cover, and cook for 15-18 minutes until the orzo is tender and liquid is absorbed.
Remove from heat, stir in grated Parmesan cheese and chopped fresh basil. Adjust seasoning if needed.
Serve warm with extra Parmesan on the side if desired.

This recipe pairs well with a crisp green salad and a glass of Italian red wine.
