Instructions
Preparation Steps
Heat olive oil in a skillet over medium-high heat. Brown the beef chuck roast on all sides, about 3-4 minutes per side.
In a blender, combine chipotle peppers, garlic, cumin, oregano, beef broth, and apple cider vinegar. Blend until smooth.
Place the browned roast into a slow cooker. Pour the blended sauce over the meat. Season with salt and pepper.
Cover and cook on low for 8 hours or high for 4 hours until the meat is tender and shreds easily.
Remove the meat from the slow cooker and shred with two forks. Return shredded meat to the sauce and stir well.
Serve warm in tacos, burritos, or bowls with your favorite toppings.
Notes
For extra flavor, marinate the beef overnight with the sauce before cooking.
